It's all about compartmentalizing, temp control & estimation. Like many things, if you've done it enough times, it sort of becomes a habit. That vid just shows people who do it for a living, they're almost automatons since most of it is repetition. I would be cooking while chopping and washing the kitchen tools at the same time. I hate standing still. and waiting.

I notice a lot of the fast cookers seems to be from the Asian land and some from the land of the snackbars..
