Rare - Medium Rare.

Any more done and it's ruined the aging and seasoning process, tastes like shit.
 
I go med rare for most part in restaurants. As I am thinking of others at the table. But rare is my go to.
At a steakhouse work dinner, I was last to order, everyone ordered med rare, came to me and I ordered rare. Everyone changed their order.

growing up, the meat in my house was cooked through to death. My mom would insist it had to be charred. I missed a good 20 years of properly cooked grill meat.

Depends on the cut, if it’s something like a filet or skirt for fajitas I’ll go medium rare. If it’s something more robust like a ribeye or t-bone I’ll go medium.

Rib: medium
Striploin: rare

If you are a blue/rare dude, seriously try a really good rib done to medium. The cooling process melts the fat into the meat and its so good.

My mother was the same. Any hint of moisture was cooked out of the meat. Pressure cooked roasts were the only meat with any moisture at all.
