I get egg white omelet with turkey and cheese. My stomach can do yolks anymore.
 
The cholesterol in the yolk is oxidized. Increases free radicals. Also, vitamins diminish with cooking. Conversely, cooking the protein is superior. Denatures the protein, makes it more digestible. Cooked egg white + uncooked yolk is the best way to eat an egg, nutritionally speaking.

I believe you can avoid that if you cook the eggs low and slow, which is the way you're supposed to cook them, so French omelette should be okay, but an American omelette (with the browned bottom) is not.
Ah, remarkable, thanks! Did not know that. Been doing low and slow for years with cover on for even cooking, occasional boiled.
