How did he break the grip?

It looks like he pushed his chin down.

Not down, but in. As in, dig your chin into your opponent’s ribs. I usually say ‘listen your opponent’s armpit, glue your ear to it’, because if I just say ‘dig your chin in their ribs’ people often don’t turn enough, they only just touch their chin to the ribs, which is not enough vs. someone really cranking on the sub. You have to really turn your head and dig that chin into them. But then you absolutey can survive most mounted guillotines.

I say ‘most’ because the exception is if they have sneakier finishing mechanics. The closed mount, skydive sprawl method is garbage in my opinion, as we saw here. There are better, more reliable methods that will cut through pro resistance. But again, luckily most people just try to finish it this way
