As a law-talking guy (but still anonymous internet user without any reasonable expectation of liability, of course,) what do you feel the odds are of "the dog ate my homework" being an effective defense?

None. It would likely be treated the same as when a child does this kind of stuff, and when that happens typically the charges stick because letting someone within your household get a hold of your credit card will not qualify as “unauthorized” charges due to the fine print of the Ts & Cs in the credit card agreement.
