I’m half Filipino. It’s called “chocolate” because of the dark coloration, from the pork blood. And since “bloody meat” doesn’t sound great, it’s called “chocolate meat”.
Filipino food is not for the feint of heart. And Filipinos are keenly aware that most Americans find their food shocking, so it’s entertaining to them to try and get Americans to try and and watch their reaction. I’ve brought a lot of white girlfriends to family cook-outs, and had to run interference as my family tries to get them to try weird shit without being upfront about what it is.

Bro I grew up on sinigang haha.All I know is I would love it with pork belly, my wife always wants to add pork intestine. At least she cooks it separate.
Nothing beats Sinigang though there isn’t a damn person on this forum that wouldn’t like sinigang with pork belly.
