Gotta go with Prince of Persia really sticks out to me the one I like the most.


 
FF7 and FF8. Can't go wrong with Nobuo Uematsu.

Also, played this indie game, "12 is better than 6". It had a remarkably good soundtrack. Alternating between flamenco, instrumental rock, and metal/blues.
 
Ill post some of my favorites from these soundtracks.
Painkiller. They dont make enough metal soundtracks in games these days.

Jeremy Soule's work in the Elder Scrolls series is probably my favorite out of all video game soundtracks. It's so damn immersive

Starcraft. Some of the music literally works for putting my baby to sleep, no joke, particularly the Terran missions around 4:22 and 14:50 on this vid.

 
my favorite ost is FF9, but any piano ost of Final fantasy is phenomenal.

aside from that I'd go Shenmue 1&2 and GTA Vice city

May not be the best in terms of "aesthetic quality" or whatever... but I like Killing Floo/Killing Floor 2 soundtrack. Ruthless brutality as you kill zombies. Definitely gets you in the mood for violence and carnage.

GOAT melody for a theme song, hands down. It invokes electronica and smoke-lounge jazz in the same measures. 8 bits: 8 tracks, 8 simultaneous tones. That's all it is given. Virtually nothing. Never has a soundtrack done more with less. It's a masterstroke of musical inspiration.



No theme song has as much potential for sophistication in arrangement and treatment:

 
Skellige music nearly brought me to tears in Witcher 3. Bloodborne DLC boss music is also epic.
