You should be more specific. The EU expansion means three countries in the last 20 years, of which Croatia is very nice.

And most countries from the 2004 wave looked fine to me, maybe safer and cleaner than the founders. Poland, Hungary, Czech Republic, the Baltics etc. are all worth a visit. Malta is spectacular, too bad it got very crowded since it joined EU.
