I know there's a ton more that we missed out on but what other ones do people have?

Rumble vs Jones for sure. Bisping vs Whitaker not so much.

Dustin/Nate that got cancelled on 230. We can still see it at some point.
 
I was really bummed when RDA pulled out of the McG's fight. The Diaz fight and ensuing rivalry are amazing, and I don't regret they happened, I just wanted to see that fight too. It will be an actual travesty if Gaethje and Conor are never paired up.
 
Gatelum and Whittaker.
Al and Gaethje (although I'd be torn).
Al and Felder.
 
Mousasi v. Bisping was the original main event in London. Michael got ultimate Christmas gift as an aging Anderson came in and stole headliner and Gegard( on same card in co - ) ended up murdering the same bjj practitioner who walked down Bisping a few months earlier in a " split " decision.
[ In a pod later on, Bisping actually said the words " I was relieved I didnt have to fight Gegard Mousasi [ fu- swarthy....I know what I heard] ].

That fight ,indirectly, changed the whole trajectory of middleweight division for YEARS, unfortunately.
