Carbs are awesome.
On high carb days, you still need some fat. I count 5g of fat (from the fish oil), plus whatever residual fat in the other foods (totaling at most another 5g). 30-50g shouldn't hurt you. People (Lyle McDonald and others) suggest mono and polyunsaturated (mostly mono I think) during a carb-up, so add some olive oil, and nuts, or whatever.
