If this was a poll, I would vote Carl Weathers, just purely because I think he may be the most respected for his acting and his Apollo Creed performance was really high level acting performance imo.
 
In recent memory I'd say Dave Bautista has potential to be a great actor imo. Oscar worthy even.
 
Honourable mention: Harald Sakata.

Sakata won Silver in Weightlifting at the 1948 Olympics. He then became a Pro Wrestler before portraying one of the most iconic characters in the entire Bond franchise: Oddjob.

At the beginning of Goldfinger, Oddjob knocks out Bond with a strike to his neck. Bond collapses and winces in pain. This wasn't acting; Sakata was inexperienced at pulling his punches, and injured Connery's neck.

Bond kills Oddjob by electrocuting him. He screams in agony, and if one pays attention you can see the shock on Bond's face. Again, this wasn't an act; the squibs they used to replicate electrical sparks went off too close to Sakata, causing serious burns. But Sakata refused to break character until the director yelled, "Cut!". Connery realised what was happening and was genuinely concerned for his colleague.
 
Is the question who is the best actor who used to be a professional athlete? If so its Kurt Russell by a wide margin.

Yeah he was born to play Apollo as much as Sly was born to play Rocky. And Burt was born to play Paulie...man the stars really align once in a blue moon when making a movie.

Carl Weathers as Apollo Creed is one of the ones like Judd Nelson as Bender in The Breakfast Club where it may be the only role they were truly born to play, but maybe nobody else in the world could have done it right.

Yeah Burt Young told stories about how he just tried to get into Lee Strasberg's acting school with no acting training to impress a girl...then it all fell into place because he was one of the people who had already lived a life he could bring to his characters as opposed to just tons of education.
