HIPAA and Proof of Vaccine Status
"Vaccination information is classed as PHI and is covered by the HIPAA Rules. However, HIPAA only applies to HIPAA-covered entities – healthcare providers, health plans, and healthcare clearinghouses – and their business associates. If an employer asks an employee to provide proof that they have been vaccinated in order to allow that individual to work without wearing a facemask, that is not a HIPAA violation as HIPAA does not apply to most employers."

You should brush up on your following conversations in here. I never said HIPPA protected them from being asked that, in fact I specifically pointed out that HIPPA didn’t protect from being asked. Being asked and answering is voluntary:
Are you in the US? I haven’t heard anyone being able to flat out skirt HIPPA laws.. btw, it’s not against HIPPA to ask, it’s against HIPPA to force disclosure. Asking makes it voluntary. Sounds like you can still say ‘I decline to answer that question’
If his business decides to let go of unvaccinated people or people that won’t disclose it, that would be their choice to do so.
