Are these like people who walk around the casino and try to catch people cheating?
No but I install a lot of cameras. Its mostly done via camera nowadays. They've cut back on a lot of pit boss type jobs as they've added automatic shufflers and stuff like that. Most of the "undercovers" nowadays (post 10/1) are looking for bombs or guns.
My buddy did that job for the largest indian casino in the nation and got fired for falling asleep on the job
In Asia, Pit boss job is mostly to assign dealers to their scheduled table for the day or make appropriate changes for any sudden changes.
Surveillance is a whole other job, they basically sit in front monitors watching the 2000+ cameras installed. They look out for dealers error in payments, suspicious players and so on.
I wouldn't mind observing the ho's who are said to operate in casinos.
They chew a lot of bubble gum.
