He was hated for being the best in the world and got love and support and sympathy for getting dropped by a drunk fat guy.

Can' remember any cases when a fighter was extremely hated and then loved, there are a lot of examples of the opposite, but there are milder cases like maybe Cody Garbrandt, I think that most fans disliked him but after the EPO thing with Dillashaw and his last fights I think that he is getting more love from the fans, Artem Lobov was ridiculized and disliked but after going to bareknuckle and beating Paulie he earned some respect, even DC was disliked by many fans prior to the Jones fights as someone already posted, also Tyson Fury, even when he beat Klitchko you can find articles in mainstrem media from 2015 naming Fury the worst HW champion ever , today nobody would say that and many people forgot or don't know that he wasn't as likable and respected as a boxer as he is now

Fury's a good call. up until the past 2 - 3 years the only time he would get mentioned was to post a gif of him uppercutting himself in the face

Vitor comes to mind. Had a bad streak after his sister died, then turned it around, got some big wins in Affliction and tore the UFC up again to challenge for a couple belts.
I came here to say Vitor but my explanation was that he's a lifelong drug cheat who's wildly popular

Bisping took the fight 17 days notice against a dude who owned him the first time they met. The champion himself. It's fair to say that the odds were against Bisping.
 
Jens Pulver kind of had the opposite of a redemption story. Was on top, went over seas and came back to UFC when they reopened 155. They bring in this kid they think is a can to remind the world who Pulver is. Joe Louzon was a 7:1 underdog if I remember correctly. He soundly beats Pulver. Pulver fights BJ. Wrecked again. Is cut to WEC where he somehow beats cub Swanson to go on a huge losing streak. Wether the game evolved past him or him past it is hard to say. One thing is for sure though, he could not be restored to his former glory
 
Jon Jones was loved during his run up to the title, then became vehemently hated after for “being fake”. Wrapped the Bentley around the pole and ran the lady off the road. UFC gave him a redemption story parade of marketing. He came back loved after beating DC and gave that heartfelt post fight interview. Everyone loved him again, BUT popped for gear after the fight and got ruled a NC, was universally hated again, told to embrace his inner demons, now he’s just flat out asshole no f**ks given heel and people love to hate him.

Yeah I'm not sure. Maybe Conor fans was just loudest and most noticeable. I've also seen a fair share of people discredit Khabibs resume at the time for lack of wrestlers or ranked opponents or boring style.
I've seen some try to discredit Khabib for the same but he's undefeated and it's hard to argue anyone in the top 10 would beat him
