Because it was without Sammy's knowledge and MJF was pushing his buttons hinting that he'd attempt to take it out of context. MJF made it so obvious at the end that he was recording him too. He's been winding up Sammy for months now and he knew Sammy would blow a fuse and attack him eventually if he kept provoking him.
