GSP lacked killer instinct and submissions, he also didn’t have much power.
(Maybe because he didn’t want to hurt people)

GSP is definitely one of the most well-rounded, but I'd put Fedor and Jones higher. All 3 guys were able to outstrike strikers and outgrapple grapplers, but Fedor and Jones had more finishing ability in all positions.

At some point, in his prime, I really think he was the best MMA wrestler though.

I don't think so though there was a time I might have agreed. It was less GSP being well rounded and more GSP's opponents typically being one dimensional wrestlers. Johnny Hendricks passed for well rounded in that division and we all know how that turned out.

Woodley, Marty and most elite WW's are more well rounded IMO.

Jones isn't one dimensional the opposite he's just missing one thing when he has everything else. But sucking at one sort of striking isn't the same as sucking at striking as a whole and Jones MT more than makes up for this. By this logic AS has the better case for being well rounded cause he's basically a smaller worse Jones in every way except for punching power and he has a highlight KO reel Jones lacks especially recently. But GSP doesn't have that either.

MM also lacks punching power though most 125'ers are going to lack that.

He has one of the best jab ever, his wrestling is considered by many the best in mma and the best at game planning.

Well rounded? Probably jones or DJ. Someone like GSP or Silva I always thought was extremely good at one thing, and proficient in others. But jones and DJ....you see them finish guys in the clinch, standing, ground consistently. They are constantly a threat everywhere. And can attack almost any fighter in those areas.
