No particular order:

Serra vs gsp 1
Hughes vs bj 1
Bisping vs rockhold 2
Gonzaga vs crop 1
Coleman vs Smith
Honorable mentions Forrest vs Shogun 1, pulver vs penn

Serra-GSP
Holm-Rousey
Dillashaw-Barao
Peña-Nunes
Gonzaga-Cro Cop

Also one that didn’t happen to a super notable fighter, that chick that beat Mariya Agapova when Agapova was like -1400 is hilarious.

BJ Penn vs. Matt Hughes 1

Serra/Georges is still number one for me, likely followed by Bisping/Rockhold II and Penn/Hughes I.

Although we all know now how much of a machine Anthony Hernandez is, it was one of the biggest upset at the time he submitted Rodolfo Vieira. He was 1-2 in the UFC prior to that fight.

Serra-GSP
Holm-Rousey
Dillashaw-Barao
Peña-Nunes
Gonzaga-Cro Cop
That's a really good list.

Forest vs Rampage or Shogun is up there too. Weidman over Anderson, Frankie over BJ, Jardine over Chuck, & Thug over Joanna are some huge upsets as well.

Shad beating Chuck was an upset during those days too.

Great list. Don't think I would replace a single one.

We had better put some less weight to a kind of fluke one like Serra-GSP, or simply exposed situations like Ronda’s.

So to me, Dillashaw-Barao has been outstanding.
People forget due to steep decline of him but Barao was considered legit P4P top list at that time. And it was arguably the very first fight which TI showed he’s truly elite striker with levels jumped up. Many sharp analysts predicted it’s too early for TJ even with his talent.

Then from the beginning, TJ fought like he knew he had Barao’s number and that made lots of people almost confused, I still remember PBP was started like WTF? Is Barao still severely drained? … plus Goldy’s reaction at the end of the first round gave a good taste.

No love for Randy Couture vs Tim Sylvia?

A pretty good upset was Shogun-Forrest 1 (timestamped).

Gonzaga/Cro Cop was the biggest shocker

Shogun/Forrest was very surprising, I was expecting Shogun to stream roll him easy, I was very cocky and dismissive of Forrest.

Shogun v Forrest is higher than Gonz v CC

It is upsetting to have to sit through WMMA during UFC events
It actually makes me miss John Fitch

For those of you who don't know, John Fitch was a very boring safety first wrestler from Purdue, who did really well in the UFC but got beat by GSP and a couple others, but he had an amazing record and very successful

He never aimed to finish and it was extremely boring, but effective fighting style. He was a mandatory challenger to GSP with like eight wins in a row. Not that marketable or exciting but couldn't be ignored.

Anyway, the joke for a while was wet and he fought you would go like have a cigarette or take a shit or call your mom or anything that takes 20 minutes because you knew you had

John Fitch has now been replaced with WMMA
