Why cant they pause the fight for 30 mins?

Even supposing it wouldnt have helped, in principle, why does the UFC refuse to pause fights for longer than 10 minutes?

Holyfield-Bowe was stopped for 21 minutes when a guy crashed into the ring with an airplane. Could have told Tom they give him 30 mins to see if he regains his vision. 10 is too short.

I mean all the media, all the workout and you cant wait 30 mins? Cards get delayed all the time.
