This take down has been banned in most grappling tournament because of knee injuries. Why don’t we see this utilized in mma more?

That is very true. You fight how your train and it’s too dangerous to do it on training partners and the risk isn’t worth the reward1. If you don’t do it in sparring you won’t hit it in a fight.
2. If the td fails you’re in a bad position, worse than a shot getting stuffed
