Ribs are great, but there's something about a steak that simply can't be matched by anything else.
Must be exceptionally high-quality beef, with a good marble of dark yellow fat running through, and cooked in the correct manner - with a strong crust of seasoning, done over a screaming hot wood fire on a thick iron grill, well rested, and served rare. With chips, some steamed vegetables, and whole grain mustard. Perhaps with a small jug of bernaise on the side.
Edit - drink will be either a world-class Argie Malbec, or if we're having this in France, a vintage Pontet-Canet.
Pork ribs all the way. I love to crock pot a few racks in seasonimg, BBQ sauce and ginger ale while I'm at work and then make sandwiches with them on a good roll.
