Not exactly what you're looking for, but Ortiz vs. Shamrock... Shamrock weighed in first at 206, and Ortiz made a HUGE deal over it, threatened to call off the fight, stating that his contract said 205 lbs, that it was disrespectful to him because he had to go through the trouble of cutting to 205, etc. etc. Then Ortiz proceeded to weigh in at 206.5 lbs and had to attempt to make weight again later that night (in which case he was successful).

Not what you were asking, but Sean Sherk and Hermes Franca both tested positive for PED's after their title fight. It's a shame because it tainted what I thought was a great fight.

Rumble and Vitor....although Vitor did I think weigh in at 185 but they both fought well over the weight since it was allowed.
