There's been so many over years, and so many outside of the UFC, but I wanted to focus on UFC only submissions. Here's a few that I think belong at the top of the discussion. Feel free to add to it, but keep it UFC only.

Surprising really how few UFC title fights have really turned on a submission, I don't mean something like Khabib/Conor where one guy is beaten and then put away by sub by there a one off sub wins the fights.

Nog and Mir vs Sylvia
Anderson vs Sonnen 1
BJ vs Hughes 1
Hughes vs GSP 1
 
This is one of the most underrated subs in the UFC, its a shame people doesn't talk about it more often

I will always consider Mighty Mouse's suplex into an armbar to be the slickest submission in UFC history.

the MM flying armbar was a thing of beauty. could not believe it the first time i saw it. dude did not get enough credit when he was on top, not by a country mile.
 
There are a lot of fine submission fights. In the UFC, however, my all time fav is not based on the fanciest technique... its' based on the sheer effectiveness of the wrestler who flattned Royce Gracie and his bull sh*t along with it. Matt Hughes.

I'm not real schooled in grappling, but another one of my fav's, is Tito's near upset submission against Machida... in final seconds of the fight. Although it failed... it would have marked a watershed win against Machida, who was repeatedly stair stepping his way up to the title.

Though not my brand of fighter, Tito put on a great fight against what was then read as an impossible opponent. Tito's moxy built the UFC during the growth years, which I never forgot. And same showed in the Machida fight. Kudos to Tito for stepping up to what everyone thought would be a sure loss.<GrassoBless>
