More intense garlic flavor, which I like, if you just add finely chopped garlic to mashed potatoes, mix, and serve.

How do I make greek potatoes with sufficient lemoniness? I've been boiling sliced lemons in the water with the potatoes to par blanche before roasting but it never quite does it. I'll add like 3 lemons to the boiling liquid after zesting their peels entirely, plus the juice and zest of another lemon when they're finished blanching before roasting. still, nothing like the kind you get at a greek restaurant.

Somebody told me the secret is not more lemon, its white wine vinegar added after they've been boiled, before roasting. Have tried that too. Nothing.

I'll often add some durum wheat tubes to the water as the potatoes boil and then finish with a seasoned cheese sauce of some kind. Sometimes I even leave the potatoes out of the recipe all together.
