Im gonna nominate Matt Brown. He's one of my favorite fighters for this reason and his fight with young Erick Silva was truly one of the best fights I've ever seen.

The sapp fight was incredible especially at the time it happened,sapp was still hungry and no one knew how to deal with a monster like that
The crocop fight was also insane
But honestly most of his fights in pride were awesome

Jamie Varner is someone who hasn't been mentioned. When he had his fight with Krause at UFC 173, he broke his ankle but kept going for waaaaaay too long. He made the crazy conscious decision to keep fighting.
