Do you eat your potatoes with skin on them?

I've seen a video with an American guy making a potato salad and he mashed the potatoes with skin on them.
Another American cut them into pieces with skin on them and put them in the oven.

So, how do you eat them?
How about sweet potatoes?
Or eggplants?
