What's better?

Rows that are connected to eachother like you see at a supermarket or more of peg board design where each peg is a stall.

Goal here is maximum visibility and encouraging folks to spend their money.

Pegboards in an aisle style like supermarket is how you maximize space, and direct traffic. That is how most open air markets are designed.
