Best books about running a gourmet restaurant?

Can you recommend me books or even documentary that revolves around running a gourmet restaurant?

In a way. It's awesome and i would highly recommend but prob not what ur looking for although still very insightful and super entertaining.

I've been there. Fake it until you make it.

Look at things that are being wasted, look at workers who are not being efficient and get on their ass. If theres certain things that are taking way too long to prep suggest they take them off the menu. Try and not have dishes where you're ordering expensive things just for that one dish. Cut hours down if people are standing around or if you feel like you could operate with less people.

Be hands on, help out stations if they're struggling and earn the respect of your staff. That's all I got for ya, the paperwork side of things is the easy part. I'm not gonna say you've got this.. but use your head and just be professional hopefully you can pull it off. If not you'll learn alot at the very least.

True on all accounts. Also SEO and online presence is extremely important.

My case was me giving few advice since I worked at my families restaurant. The advice was well received and I might be in a position to be a consultant or something. Either way if nothing else I too also have developed an intense curiosity about the gourmet restaurant business.

They're hiring you to save money. Just think of ways to cut costs and they will love you for it if you can keep the quality of food up at the same time.

True, I will look in to suppliers. See if there is someone who has better prices while quality remains the same.

You mean fine dining.......a bit. It's not the exact thing you're looking for, but it's a great read for anyone in the industry. It's more anecdotal than informative.
