Is simple. He desperately wanted to deliver on his promise to rearrange Conor's face. He knew there was no glory in submitting Conor as Nate, Joe Duffy and some other no name cage warrior journeymen did that and it didn't hurt Conor's career.
No, he wanted to do what only Floyd has done, stop Conor on his feet. So in rd 3, after 2 rounds of leg hugging and figuring Conor would be spent he decided to stand and bang. He gets a rude awakening and after getting outclassed and losing the round he reverted to type in the 4th and had to settle for winning the only way he could. He wanted to shock the world with a KO but even an exhausted Conor had too much for him.
This is why he rage-lunged at Danis after the bout before quickly scurrying off and why his goons blindsided Conor in the cage. It was devastating to him and his crew to see Conor's face unblemished and him walk away with another non-impactful loss by submission.
He will have learned his lesson however and it is guaranteed in the rematch that he doesn't attempt the foolishness of round 3 again. He will leg hug it from beginning to end.
