This one's a bit tricky because a bunch of you will say "that guy is not Mexican, he's American", or "why didn't you include so and so, one of his parents is Mexican", etc...
I guess you can never make everyone happy, but I'm gonna include the guys who are of obvious Mexican ancestry and who have had it associated with their identity. So the Diaz brothers for example are excluded (not that either of them are a GOAT anyway), and guys like Gaetje or Jeremy Stephens who have some Mexican blood, but are more American than anything else are also excluded.
Basically the question is who will go down as the GOAT, because a lot of these guys legacies are still being written and they are still active fighters.
HENRY CEJUDO
The case for Cejudo: won and defended a belt in two divisions, beat some of the best guys in two weight classes, retired on top
The case against Cejudo: lack of longevity, only fought for 6 years, retired too early
CAIN VELASQUUEZ

The case against Tito : lost too many big fights, almost no big notable wins in second half of career
DOMINICK CRUZ
The case for Dom : former BW champion, dominated division for long time, several big wins
The case against Dom : too inactive, too injury prone, loss to another Mexican GOAT candidate
YAIR RODRIGUEZ
The case for Yair: youth, future potential, style points
The case against Yair: no elite wins yet, only fights once or twice per year
KELVIN GASTELUM
The case for Kelvin: former interim MW champion, moved up a weight class, youth and potential to do more
The case against Kelvin: no elite wins yet, currently on a losing streak
