Are there any leg scissor specialists? I have seen it smaller orgs in MMA once or twice but is anybody doing that in competition grappling regularly? Nobody with any experience has ever tried it on me in rolling.

I think you meant to say, arm in triangle from back with elbow . If do right, no can defend.
