In my (limited) experience it is VERY VERY rare to find wrestling classes for adults who have a beginner's skillset and simply want to develop skill (modest or otherwise) in the Martial Art of Wrestling.
Your best bet is probably
Edge Wrestling School, which is in New Jersey, not California. It's the only explicit wrestling school that I can name which does not discriminate against beginners who happen to be adults. Other than that, go to wrestling classes at MMA gyms and hope the coach actually has a background in coaching competitive wrestling. You may be able to find high quality instruction there, but it really varies by gym. I know that Atos have a wrestling class as well, but I also am in contact with a fellow white belt who trains at that gym and he says that it is the most physically exhausting class they offer.
Other than that... I recently attempted to sign up for a wrestling summer camp at Penn State that sounded EXACTLY like what I'm looking for... only to email the program director and have him inform me that my inclusion would violate NCAA compliance guidelines.
BECAUSE APPARENTLY MY DATE OF BIRTH MAKES ME A CHILD MOLESTER.

There just isn't a lot of leeway for a guy like me who has an elementary schooler's skillset at age 20 yet still WANTS TO LEARN WRESTLING.
Private lessons may be beneficial as well, but you lose out on the sparring aspect with that...
Oh well, don't mean to sound like a downer but yeah, it's really hard to find good places to train wrestling if you are not an actively competing scholastic wrestler OR an alumni who was a former member of the team.
As an addendum, I
completely understand why parents would not want their child to wrestle with someone my age... but I literally suck ass and couldn't score on anyone who wasn't in middle school.
