This is a french onion soup cheese steak. I caramelized onions, made a 50/50 swiss and cooper sharp american cheese sauce, and cooked the steak meat in a few table spoons of cambells condensed french onion soup. Topped with some pickled jalapeno's. This is my take on a french dip.

what is the meat shredded beef?

Did it come pre shredded?
 
Meat sliced to thin and choppy. Looks like the meat from a Subway cheese steak.

French dip? Where’s the jus?

The fact that you claim it’s a French dip and provide no dip while saying it’s cooked into the meat is a joke.

So the backstory, I picked this Hobart 1612 up for $150. Its needed a new Capacitor and a the centrifigul switch was bad, so i replaced it with an electronic switch. It cost me $50 to fix. So i got a $1500 commercial slicer for $200 total.

I think you'd be better off ditching the soup and jalepenos, but to each their own.
 
Never had a cheesesteak before, they look delicious
 
Some places have it here but haven't had one in Philadelphia, want to try making an authentic one myself at some stage.
Same, I was cruising around Melbourne one night recently and i saw a joint that had them and they looked amazing but I’d just eaten, I thought id definitely go back but fuck me i can’t remember where it was, I’ve tried googling it and nothing, starting to think it was another suburb

Bowery to Williamsburg Cafe in the city does a good one, well I liked it anyway, again no idea of authenticity but good stuff. The brisket and eggs is a good option too, and good coffee as well (you have to make good coffee in Melbourne or you're fucked)
