This. Even if you do have passion, there are so many factors, it is extremely difficult to succeed. Location is huge. Staff, both front of house and back. These guys just slap their name on a place with an ownership stake - the actual restaurant is run by the managers and executive chef. Even the top names in the culinary world frequently fail and close locations.The food industry is the hardest to succeed it takes passion you cant be half assed.
