Why isn't Wingchun used in UFC

But proper wingchun is the counter for sport fighting like wrestling

With good footwork and instincts you get yourself out of the way like a matador does to a bull.

If someone tried that against any skilled striker they'd get slept. MMA encompasses a lot more than just boxing and the boxer in the video didn't look very good at all. He has no footwork or head movement and looks amateur at best.

WIng chun isnt designed for sport context. The sport version of kung fu is called san da and is used in mma. Cung le for example.
