Conor and Max are both amazing mma boxers, they never let Jose get the angle to feel comfortable kicking. Conor didn't let Jose do anything lol

MM is also a damn good striker. when Jose was kicking fools he was fighting guys that let him dictate the pace/distance... Thus more kicks.

Aldo also gets goaded into wars more often. If he could have kept some distance and just kept spamming those kicks he might have had a chance. Max is just a huge fucking tank.
