I'm just wondering if people outside the UK do this. I think I'm in the minority in the UK too. I wake up more excited on Boxing Day than I do Xmas morning these days. Boxing day brunch is the best meal of the year for me. Fry off some diced onion and bacon lardons until golden brown then add chopped up Xmas leftovers (roast potatoes, parsnips & brussels are essential for me but anything goes, it's personal preference). Mash it lightly as it cooks off and get a nice crisp to it and served with a fried/poached egg. Some people serve it with scrambled eggs but I don't think it goes very well. Shit's amazing. You can also transfer the bacon & onion into a bowl once golden brown and add the cold leftovers into a bowl and mash thoroughly. Then shape the mixture into patties, coat with flour and bake in the oven for bubble and squeak 'cakes'. Any other Boxing Day bubble & squeakers on Sherdog?
Bubble and Squeak may be the most British sounding food ever. And no, I know no Americans who do this.
You know it wasn't until last year that I found out that Boxing Day has nothing to do with the sport of boxing? I just always assumed that it did. I thought it had something to do with English passion for organized fisticuffs.
