My vote goes to Big Foot.

This guy can beat anyone and is tough as hell in some fights, but then come fights where he is fragile like a child. I mean WTF is that?

Even his speed and movement is very different from fight to fight.
 
Ellenberger. He keeps me flip-flopping between belief and despair. It's all in his head.

Hard to put that label on someone (Bigfoot, Overeem) in the HW division as quickly as those fights can end.

Jake Ellenberger, Edson Barboza, Abel Trujillo, Charles Oliveira, Ian McCall

until recently Michael Johnson.

young guys improve, or get left behind.
 
Shogun or Bigfoot.

Both either KO someone or look horrible.

Josh Thomson and Takeya Mizugaki in my opinion seem to fight to their opponents level. You see them have close fights with mid to bottom tier type talent but then you also see them have close fights with top ten guys.
 
He seems to have turned a corner, but it's hard to forget Michael Johnson's back-to-back piss-poor performances against Jury and Madadi.
