Jones vs fedor when fedor was in his prime. That would be the best ever vs the best ever.

Currently, Jones vs Cain. I would pick Jones via 3rd round sub, but the fight would be great.

Also, as a Jones fan, I would love to see another shot at Gus. I think Jones won't try to stand with him in the rematch, dedicates himself to taking Gus down, then finishing him. But, historically speaking, that wouldn't mean much because he already beat him.
