I'm kinda weird. Sometimes I love charred to hell meat and then almost raw. It's kinda like eating a hot, fresh pizza. It's great but I also like it the next day cold. I guess Medium/Medium Well is my default but I like it undercooked or overcooked too.
if it's generic store bought beef or even at a restaurant, I go medium well, since I don't know who handled the meat or how long it might've been sitting out. But if I have fresh local beef and cook at home, medium rare is fine
I don't like a thick pub style burger. A couple of super thin smash patties are best. With those, you don't really check for done-ness as there is not a center you just get a crust on each side.
