I have been watching UFC from the beginning, but I have missed some events here and there, but what move have we not seen yet? I can think of one, and that is the sweeping leg kick, or whatever you call it when the fighter crouches down and swings his leg around and sweeps the opponent. Always wanted to see that move actually executed in a fight. Be cool to see someone like Cro-Cop go for his head kick and the other fighter go low and kick his leg out in mid swing.

That sweep is surprisingly effective. Mostly the element of surprise is simply bypassed in favour of repetition and drilling, even at high level. Creative fighting is rare.
Remember the showtime kick? The simple front toe kick?
The sweep will come.
