What are your dream fights in each/every weight class?

I'm sure there's been a thread like this on more than a few occasions in the past, but it's been a while. So really, what are your dream matches in the various weight classes? Don't feel obligated to list every single one if you don't want to. Fights can be among current fighters, past fighters who never squared off for whatever reason, a current fighter and a past fighter, etc.

My only "rule" is that you limit it to people who had at least one documented pro MMA fight, so no "Dominick Cruz vs. Bruce Lee" or some BS like that. Adding a little blurb for each fight is preferred but not required.
