Bebop is good, but let's not get carried away. The general consensus usually goes to Neon Genesis Evangelion, Samurai X (Ruroni Kenshin), or Death Note. NGE more often than not.

Also, Princess Mononoke is usually supplanted by Akira on most lists. Akira paved the way for modern Animes.
