Chicken heart on a stick is a regular staple here in Taiwan's night market.
I had bat soup when I visited Palau, it was funky. It doesn't really count as eating the bat since you only drink the broth that the bat was cooked in it.

The most unusual meat I've had is probably pangolin

I only found out after the fact, taste extremely close to pork. Had I know what the dish was, I probably would have only taken a small bite to find out what it taste like since it was already dead and cooked. But if it wasn't cooked yet and I had a choice, I would've been against killing it to eat it.
 
I’m not sure bat soup sales are going to be skyrocketing moving forward.

I've had sweetbreads......which are neither sweet nor a bread.. "organ meat from the thymus gland and pancreas"

I've had chicken hearts at a Brazilian meat house.

Escargot....but is was basically soaked in butter and garlic.
