I will start the list off.

Robert Whittaker vs Clint Hester: Hester was not ever well known, but he did have a solid reputation as a hard hitter but with a pretty bad gas tank. Only 2 rounds max at his pace. But the fight was reasonably back and fourth but Whittaker clearly got a 10-9 for the cleaner strikes. Hester was 11-3 at the time and Whittaker was the first person to knock him out in MMA. This was the start of Whittaker's 185 run.

Spinning back elbow from Hester:

Also, Whittaker vs Tavares. I don't recall anybody flat-lining Tavares like Whittaker did.

Wonderboy's tko of Whittaker is also really underrated.

Colby Covington vs Dong Hyun Kim: who else has really out-grappled and out-wrestled Dong Hyun Kim?

He isn't one of the top fighters, but he has been one of the best grapplers (underneath Nelson, Maia etc) to fight at 170 and is a better wrestler than both Nelson and Maia. Covington just took him down with ease with a knee tap. Very impressive imo, he even rocked Kim (who is a bit glass chin as of late, sadly). Kim is a very solid win and tough to out-grapple regardless.

Forrest Griffin submitting Shogun. It was talked about, but not to the extent it should have. As a Forrest fan I could not believe what just happened

Aldo over Kenny Florian

Anderson over Sakarai

Chris Leben over Jason Thacker. That loss would be the only of Thacker's career.

I don't think Kim is that great, not to say that beating him isn't impressive. He struggled really bad with a 170LB Nate Diaz(arguably should have lost) though. I truly think Maia's win over him was legit, although some will say it was a fluke injury.

Yeah, he has looked not that great in several of his fights, but he has proven himself to be a very good grappler. Almost like a Yushin Okami, one who isn't very great/not good enough to be champion, but he has out-grappled many good grapplers. I do think that was a fluke though, lol. It looked as if he injured himself as he defended the takedown, but it happens in grappling.

RDA on Lawler.
Not really underrated put any fighter in there against a guy with a torn acl and meniscus in the same leg and they'd win. Idk why people don't realize that happened and in the second round too. He couldn't do anything the whole fight

I seem to remember that as a real big deal around here. The die hard pride fans were running for cover.

it was discussed (and heavily debated) daily for years. but soon after the 2nd fight, it mostly died off.

i'm going to go out on a limb and say all of Jamie Varner's wins, because that shaped the entire WEC LW division for years. though his win v Cowboy was very controversial. but Varner fights just never got as much attention as, say, Bendo v Cowboy I.

HH / Ronda, all the talk was about Ronda getting ktfo as opposed to HH getting credit for doing the ktfo.

Ben Henderson over Brandon Thatch

Thatch was 11-1 (that 1 loss by split decision) and on a 10 fight first round stoppage streak, Bendo went up in weight and choked him out in the fourth round. Bendo fought Thatch less than a month after his fight with Cerrone that he "lost" in Boston, and made his WW debut vs Thatch and won FOTN as well. Thatch was a -165 favorite in that one too.

I'm surprised you mentioned Jamie Varner without talking about his short notice fight against Edson Barboza and the way he blasted through him in the first round. Barboza was looking like a monster at the time, undefeated in his MMA career and coming off that brutal knockout of Etim. When I found out that he was fighting Varner next (coming in on short notice) I thought he was going to destroy him, but when Jamie lit him up and put him away I was speechless.

um, this win was talked about for ages and ages, it wasn't an "underrated" win. Also, the rematch proved who the better fighter was.

Magny over everyone he beats. Dude is always the underdog

Kimo vs Saku
Guy Mezger vs Saku
Tra Telligma vs Igor Vovchanchin
Pele vs Matt Hughes/Pat Melitech
Aurelio vs Gomi
