Making the cranberry and port sauce, pork, sage onion and chestnut stuffing balls and pigs in blankets tomorrow to get it out of the way for Christmas Day, then roasting a turkey Christmas day with roast potatoes, roast carrots and roast parsnips.

Making a whisky, marmalade and Panettone bread and butter pudding for dessert.

Really looking forward to it, I love the smell of roast turkey on Christmas morning.

Last year was dad's side (closer to that side of extended fam).
This year is mom's side... still good times.
Taking Gal 1 and gonna be fun... party, booze and food.

Either way Lechon.

I'm going to do a duck on the weber, in-direct heat for about 1.5 hours - did it for thanksgiving and it was amaze-balls

My wife has a ham as well, but I'm no fan, so will stick to the duck.

Did you buy it or do you water fowl hunt? It’s a hobby of mine. Been taking a lot of geese this year but the ducks haven’t been so plentiful.

Haven't been duck hunting yet this year, for the same reason. My friend says the same thing, no ducks. I have been pheasant and quail hunting, those things are fucking delicious, in particular the quail.

I buy my ducks from H-Mart here in Katy - they're a decent size too.

I never heard of Panettone bread before but for some reason I been seeing it everywhere this year, I guess it must be the hot new thing out here

I've never used it before, it was getting pretty big in the UK before I left like 12 years ago when cooking shows were on every channel.
This is the traditional Brit dessert but it's a pain to make, as lovely as it is.
