Have seen this applied well in training and some comps and have had some success replicating it, but was wondering if there were any tutorials around?

Main questions are around positioning of non-underhook arm to guarantee they can't triangle you when you go for the bait.
 
Your question is confusing me so I am not exactly sure what you are asking. You can start researching over under and double under passes and bread cutter chokes for lots of info though.
 
Just keep it in tight to your body, as you begin to pass under the leg that same hand reaches back to their belt line (the hem of the pants is best) and you stack them. You can also post your far leg up and stack their legs/hips on top of your knee.

However, this is a very low percentage choke. All uke has to do is let tori pass his guard and he is out of the choke. It is used mainly to pressure a guy and make him uncomfortable.
