Tuesday 8:30-9:30 Bjj 9:30-10:30 Muaythai. Nighttime Squat 5x5 Bench 5x5 Pullups 5x5
Wednesday 8:30-9:30AM Bjj 9:30-10:30AM Boxing. 7-8:30pm Judo.
Thursday 8:30-9:30AM Bjj 9:30-10:30AM muaythai. Nighttime Deadlift 5x5 Chest Dips 5x5 BB Row 5x5
Friday 8:30-9:30AM Bjj 9:30-10:30 BoxingAM. 7-8:30PM Judo.
Saturday: Squat 5x5 Bench 5x5 Pullups 5x5

sunday is not a day off. Roll lightly ( for position only and slowly) or drill
 
More reps may not be better. It depends how long you've been weightlifting, what your numbers are, etc.

You'll probably find that 5x5 Deadlift is too much. Look more for 5x3, 5x1, or 1x5. And, at 5x5 pull ups you should be getting into weighted varieties, right?
 
Where are the Power Cleans and Overhead Press?
Jealous of your class schedule too. Thats some serious mat time.
 
A tips from someone with a similar schedule is that you really need to leave your ego at home. Roll lighter and with less muscles than you would if you attend one class only or you will run into injuries and illness very fast. I took the stupid road and got injured and sick nonstop.

Also you will develop inflammations as even the smallest sprains will be consistently annoyed when you don't rest. Also taking NSAID:s(paracetamol etc) will make it impossible for you to keep that schedule up so you will have to walk with those small injuries until you feel you got too many to practice well, then you take a month of paracetamol with lower intensity.

If you want to treat every inflammation as they come then you will be on paracetamol nonstop year around which is shit for your body.
