I'm going to be following the paleo diet more closely, so I need to replace the potatoes in a cheap but healthy beef soup/stew I make. I need something that has the "filling" aspect of the potatoes.

(Other ingredients = stew beef cuts, celery, carrots, w/e other veggies I have in the fridge that I feel like putting in)

can you use sweet potatoes? What about leeks. CArrots would be a good one like you mentioned.

As far as I know, sweet potatoes cannot be used. I've never had leek before, so I can try that out.

I used Erco's beef stew recipe (delicious) and he used turnips instead of potatoes. It worked quite well.
