For bread or pizza? Here's one a buddy gave me for pizza - it works pretty well. Should be the same for bread - just increase the ratios.
7/8 cup water (very warm),
abt 1 tsp yeast,
abt 1 tsp sugar,
add the water to a bowl, then add the yeast and sugar and wait for the yeast to prove (it will bubble up). it's easier to see this if you don't mix it together, just let it sit at the bottom
add in
1 tbsp olive oil
pinch of salt
add 2 cups of flour and mix together with a wooden spoon until it's too hard, then switch to using your hands
add water or flour as needed if the dough is to sticky or too dry
knead the dough into a ball
lightly oil a bowl with oil and put the dough in the bowl and let it rise for about a half hour. (i cover the bowl with a damp cloth, but that's just to add some heat to the equation to speed up the rising process -- you could put it in a warm place instead, or just wait longer)
