So what happens if he defeats Cormier again, does his streak of defenses continue officially? Or is his record reset and he has to start from 0 all over again??

It will be like his win-loss record. Everyone knows he's undefeated but officially he's not.

That is what's so fitting too. Jones can only blame himself for his "loss" and his title being stripped away (along with title defense streak).

He will become a 2 time UFC LHW champion. Actually, he already is: once, for beating Shogun to win the tile, and a second time, for beating OSP for the interim title.
His longest streak of title defenses will remain at 8. Beating Cormier will count as a unification but not a title defense, which is kinda silly. I guess it could be argued that it would be a defense.
